Oh yeah...that's the only way to do it, IMHO.  A good friend of mine who has this lovely spread in Virginia uses a wood plank and the Salmon tastes so great that way...you just can't stop eating it, and drinking more white wine, and eating it, and more wine and etc..etc...until you fall into a deep sleep.
