Your best bets for decent live music, in downtown Memphis would be either at BB Kings or at the Rum Boogie Café.
As a veteran of 6 Memphis in May -Beale Street Music Festivals (click to see this years line up), I have spent a fair amount of time, at least downtown. Beale street has turned a bit touristy but there are still a couple of fun spots.
Graceland always an experience (I proposed to my wife there, yet I don't consider myself a hillbilly. It just seemed like a fun place to do that.) .
But if you have the time I highly recommend the Sun Records Studio tour. Small building, tiny studio but the room felt alive with the history of those who have passed through its doors.
