I like Baroque music too when I'm in a mellow mood - Bach, Handel, Albinoni, Vivaldi, Pachelbel. Soundtracks can be a good source of easy listening music also. On the non-Classical side of things, Mark Knopfler has some lovely soundtracks. I have a CD entitled 'Screenplaying' which includes tracks from several of his film scores - 'Princess Bride', 'Local Hero', 'Cal' and 'Last exit to Brooklyn'. Composer John Barry has written several film scores also that can appeal on occasions - 'Out of Africa', 'Dances with wolves' and 'Chaplin'.
A more obscure soundtrack that I really like is by the composer Francis Lai from the film 'Bilitis'. This is hard to describe - electronica (plenty of synthesiser action) but with beautiful female voices used as part of the instrumentation - no words. I've never seen the film, but the music is lovely.
