Faced with a looming houseful of guests, I noted this morning that I was missing several of the main ingredients for the stuffing I was planning to make. Left to my own devices, I tried

1 small pan cornbread (of the two I had made the night before) (cut into crouton-size cubes) 1 onion (sauteed with a little butter, black pepper, and chicken spice 1 red apple, diced 1 small box raisins

I toasted the cornbread squares in a skillet with butter, then stirred everything together on a cookie sheet & stuck it in the oven during the turkey's final hour of cooking.

My nieces, who are very good at telling me when something doesn't work, said this was the only stuffing they've ever had that they actually liked & went back for seconds on. Everybody liked it a lot.

Funny, I thought I was missing the ingredients for stuffing, when I had 'em right here the whole time!

(The turkey was also a hit, as were the two cornish game hens (which I brined for two days with poultry spice, onion, and lime)).
