So the Un Emile actually has some Thujone,then?

Actually, it's hard to say exactly how much thujone content any of them has...and from what I understand it varies from batch to batch. The thing is most of the manufactuerers don't really want to disclose exact thujone counts because 10mg/kg is the legal limit in most cases I believe and they prefer to not say anything at all and pretend they are not quite sure. It pretty much leaves us with the task of having to sample them all to see what's good...ha! like we've got a problem with that! More frequent users probably would give you different opinions but I think you'll find the Un Emile at the very least a nice addtion to your collection...which I'm guessing is quite large.

OK...now set me right on this.  You pour cold water over a small spoon with sugarcube on it, into the Absinthe,and then that colour change happens..correct? 

Place the cube on a fork if you don't have an absinthe spoon. Drip the cold water slowly over the cube until it's disolved. You may want to taste the absinthe first just to get an idea if it's sweet enough already...the suger cube was really meant to add sweetness to what used to be a bitter drink...now in the new versions many of them have already been sweetened. You can also use a burn method if you want but be carful...remember most of this stuff has a high alcohol content...in which case you pour your absinthe in a glass and light it on fire...hold the cube over the flame with a fork and as the suger carmelizes and burns pour your cold water over it to extinguish the flame and create your louche. More interesting but using this method I've seen the glass knocked over and flaming booze go all over the table and a girl set her hair on fire...both because people were leaning in to see what was taking place...funny but dangerous. Also, you're probably going to want to balance your water mixture to taste...probably one shot of absinthe to three of water...but you'll find you're own preference I'm sure. Some like 1 to 4, 1 to 5, or even 1 to 8. Sip slowly and enjoy...in your case probably repeat the process three or 4 times in one sitting...remember the alcohol content is high but you're looking for the desired effect...not sloppy drunk...I can only say this is pretty much up to you to figure out based on your own tolerance levels...I'd hate to guess what they are in your case Geeno!
