My sister makes the following, which uses cold broccoli. I don’t eat it, too rich for my blood (cream cheese, mayo, ranch dressing mix…yikes), but I’ve tried it…and it tastes good. Depends if you like this sort of thing. She handwrote the recipe for me last year, so you’ll have to figure it out to suit your palate.
Cold Veggie Pizza Nibble
broccoli (lots of flowers), cauliflower, carrots, celery ...all diced
1½ cups finely shredded Colby cheddar
1½ bricks cream cheese
1 pkg. dry ranch dressing mix
1 cup mayo
2 cans crescent rolls
check your cholesterol to be sure you can eat this stuff without serious illness • mix well cream cheese, ranch mix, and mayo • on a cookie sheet, roll out crescent rolls, don’t separate wedges, flatten-out to cover entire cookie sheet and pinch the edges • bake as directed; cool • evenly spread white goo mixture • mix veggies and cheddar together and spread on top • press ingredients into white goo mixture • refrigerate
[Note: I’ve posted a few other recipes on the dbis, this one I’m not proud of…but it does taste good ~~ if you’re used to rich foods. Another is corn soufflé, which rocks…but is also, in all probability, not a health food.]
one other thing: if I were to make this, my personal palate, I'd add a pinch or two of cumin to the white goo mixture & fresh cut parsley to the veggies
