w0w, yum, you say “latke”, we say “potato pancake”!  one of my favorite “special meals” as a kid.  Mom used to spend all freaking day on (exactly) these…and then get only the scraps at the end of the day……bummer.   Moms of the ‘70s…like hearty angels, they were.  Anyway, thanks for the recipe (revisit) ’cuz now we’re gona have to make a day for it.  We too dolloped on apple sauce (or apple butter) and/or sour cream.  Never had it with Matzo, Klezmer, and a Menorah, …but it could be done……….
