Funny you should ask that question... It's a very real world
question at the moment. For me I think the two greatest record producers I can think of were both artists themselves; ie David Bowie and Marvin Gaye. Marvin Gaye is obviously unavailable at the moment. David Bowie? It could be interesting.
William Orbit is very good, in the right circumstance.
Bill Bottrell is brilliant.
Pat McCarthy is a great engineer and does a wonderful job with REM.
Craig Street makes gorgeous albums.
Michael Beinhorn does sturdy work across a lot of genres.
Mutt Lange is also very sturdy, reliable, and versatile.
Brian Eno is brilliant if erratic.
Brendan O'Brien is very sturdy.
I think, though, sight unseen, that my first choice would be
David Bowie.
