Pancetta is Italian bacon. It can be used in many ways but it is very good with green leafy veggies. If you'd like to try it I'd recommend sauteing it in a pan then adding some fresh spinach and garlic. It'll give you an idea of the taste and you can go from there. I also use it when cooking fish.
